Lentils are part of a staple Indian diet. We all like to consume them in various forms. Some people like to have them with rice and some like to have them with a side of chapati. The soluble fiber present in lentils helps in stabilizing blood sugar levels. They also have a high protein content which helps in the smooth functioning of your body. Apart from blood sugar control, they also help in  controlling cholesterol levels, controlling your appetite and lowering the risk of Type 2 Diabetes.

Here’s an Easy Diabetes-Friendly Curried Lentils for You-

Total Cook Time: 15-20  mins

Ingredients:

  • 1/2 cup dried lentils
  • 1 cup water
  • 3/4 cup canned cream of coconut
  • 1 tablespoon curry paste
  • Salt – to taste

Method:

  1. Rinse lentils and place in a saucepan with the water.
  2. Bring to a boil, then cover, and simmer over low heat for 15 minutes.
  3. Stir in the curry paste, coconut cream and season with salt to taste.
  4. Return to a simmer, and cook for an additional 10 to 15 minutes, until tender.
  5. Serve hot with an almond-flour chapati.
