Zucchini Rice

Total Cook Time: 40- 45 mins


  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 2 pounds zucchini, peeled and cut into 1 inch thick slices
  • 1 green bell pepper, chopped
  • salt to taste
  • ground black pepper to taste
  • 1/4 cup uncooked rice
  • 1/2 cup water



  1. Heat oil in a saute pan over medium heat.
  2. Add onion, and cook and stir for 3 minutes. Add tomatoes, zucchini, and green pepper. Stir.
  3. Season to taste with salt and black pepper. Reduce heat, cover, and simmer for 5 minutes.
  4. Stir in rice and water. Cover, and cook over low heat for 20 minutes.

Tip: Use brown or red rice instead of your regular white rice.
